Chip City, a cookie-focused bakery business, is planning to expand into Connecticut this year with new locations in Fairfield and Darien.
The company launched in Queens in 2017 and has grown to 18 locations throughout New York and New Jersey, with additional East Coast expansion in the works.
The Fairfield store is slated to open at 1125 Post Rd. in the third-quarter of 2023.
“We like the location and felt a positive vibe there,” said Peter Phillips, CEO and co-founder. “We are very excited to be entering the Connecticut market.”
The Fairfield space is currently vacant, but previously housed a T-Mobile. The company doesn’t have an exact date yet for when it will open.
“We are about to start construction, and there are always unknown events that can happen, so we can’t specify a date yet,” Phillips said.
The Darien location will be in Darien Commons on Heights Road, and that site is slated to open sometime in the fourth-quarter of 2023.
According to Phillips, there are plans for additional Connecticut locations, but these two are the only firm deals so far.
Chip City began as a hobby between childhood friends Phillips and co-founder Teddy Gailas. The pair challenged each other on who could make the best cookie. The entrepreneurs opened their first store in Queens, and they have been growing the business ever since.
The menu features an array of cookies, from staple flavors like chocolate chip to blueberry cheesecake, chocolate peanut butter, confetti, oatmeal apple pie, s’mores, lemon berry, and cannoli cookie. The business makes approximately 50 flavors.
Shake Shack founder Danny Meyer recently invested $10 million in Chip City.
Chip City plans to continue its growth, and it is currently focused on an East Coast expansion, with locations being eyed in Washington D.C., Maryland, Virginia and Florida. Longer term, there are plans to go west with locations in Chicago and Texas, according to Phillips.
